Xanthe’s Recipe for Chai |
Since giving up coffee 5 years ago, I have been exploring other enjoyable hot drinks. While I am quite partial to a Soy Hot Chocolate, Dandelion Soy Latte or Hot Lemon and Honey – I have discovered my drink of choice…. Soy CHAI.
There are some extremely good brands available from the Health Food Shop and now even supermarkets but they are still quite high in caffeine due to the black tea component.
I started making my own low-caffeine Chai about a year ago and here it is for your enjoyment. As it is a matter of taste, vary the amounts to suit yours.
1 cup Rooibos tea leaves (organic preferably)
¼ cup black tea
10 Cinnamon Sticks broken up
10 Star Anise pods broken up
Handful of Cardamom seeds
Handful of cloves
Handful of granulated ginger
3 teaspoons of cardamom powder
2 teaspoons of dried ginger powder
2 teaspoons of nutmeg powder
2 teaspoons of cinnamon powder
OPTIONAL
1 teaspoon of turmeric powder
1 teaspoon of dandelion root
1 teaspoon of valerian root
4 teaspoons of green tea
Grated zest of orange, lemon or lime
The optional ingredients I use for their health benefits but some of them are an acquired taste.

I buy the tea at supermarkets and cut the sachets open, as I have not been able to find loose Rooibos tea. TK2 sell a “Rooibos Chai”.
I also buy the granulated ginger from Green Valley Spices, but you can grate your own and it will dry naturally in the jar.
I buy the dandelion root and valerian root from Health Food Shops.
INSTRUCTIONS
Warm 1/3 parts soy or rice milk and add a large scoop of Chai tea. up with 2/3 parts boiling water and allow to brew for 3-5 minutes. I sweeten my Chai in the pot with 1 teaspoon of organic honey.
