PANDORA Polenta Health Slice |

Ingredients
• 1 cup polenta (cornmeal / semolina)
• 2 cups of soy milk
• 2 tablespoons of malt extract
• 1 cup of chopped dates
• 1 cut of chopped mixed fruit
• ½ cup of LSA (linseed, sunflower, almond) mix
• wheat germ |
Method
• mix the polenta with one cup of soy milk and malt extract in a microwave-able container
• cook in 30 second successions, mixing each time
• after 1 minute, add the remaining cup of soy milk, a bit at a time, keep on stirring and cooking in 30 second blocks
• finish when there is no more liquid and the mixture seems to have expanded
• mix in the fruit, dates and LSA mix (add an extra bit of soy milk if not mixing together properly) mix thoroughly
• place greaseproof paper on a small tin, pat down the mixture
• sprinkle a thin layer of wheatgerm on top, pat down
• refrigerate until set
